Description

Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife 牛刀

Introducing the Kinzan 金山 by Shimeru, a premium 7.7″ gyuto knife that celebrates the timeless beauty of traditional Japanese craftsmanship. Named after the “Golden Mountain,” the Kinzan radiates warmth and refinement, offering exceptional cutting performance in a blade destined to become a treasured kitchen heirloom.

67-Layer Damascus Steel Brilliance The Kinzan’s blade is meticulously forged from 67 layers of premium Damascus steel, encasing a VG10 core celebrated for its outstanding sharpness and edge retention. The intricate flowing pattern across the blade surface tells the story of expert forging, while the hammered tsuchime finish reduces friction and prevents food from clinging to the steel. Every cut is precise, effortless, and controlled.

Elegant Rosewood and Amber Handle The handle is a showcase of natural sophistication, crafted from rich, deep-grained rosewood that exudes classic elegance. A luminous amber resin spacer adds a touch of warmth and distinction, complemented by polished steel accents that frame the design beautifully. The octagonal profile provides a secure, comfortable grip, allowing for confident control and reduced hand fatigue during extended culinary sessions.

Agile Precision At 7.7″, the Kinzan offers a nimble yet capable blade length, perfectly suited for chefs who appreciate agility without sacrificing versatility. From delicate herb chiffonades to swift vegetable prep and precision protein work, the Kinzan responds to every movement with grace and accuracy.

Timeless Craftsmanship The Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife is a celebration of heritage and artistry. For those who seek a knife that honours tradition while delivering modern performance, the Kinzan will bring warmth, precision, and inspiration to your kitchen for years to come.

Bought this for my husband’s birthday and he’s been using it for everything. Says the edge retention is incredible, still razor sharp after three weeks of daily use without a touch up. Came in a nice box as well which made the gift feel special.

  2. Hayley (verified owner)

Got this knife a couple weeks back and honestly its the sharpest thing I’ve ever used. Went through a big bag of onions for a curry and didn’t tear up once. The Damascus pattern looks lovely too, proper centrepiece on the magnetic strip. Only slight thing is the handle feels a bit different to my old western chef knife but after a day or two it felt natural. Well chuffed with it.

  3. Holly Gray (verified owner)

Its a decent knife but for £75 I thought itd feel a bit more special. The blade is sharp enough and the damascus looks nice but the handle shape is a bit chunky for my grip and took some getting used to. The balance is fine but slightly heavier than my usual gyuto. Does the job but I find myself reaching for my old Wusthof more often to be honest.

  4. Nat (verified owner)

Got this for my husband’s birthday and hes properly chuffed. The damascus pattern is gorgeous, pictures dont do it justice. Sharpness out the box is ridiculous, sliced through a ripe tomato like it was nothing. He’s been using it every day for about a month now and the edge has held up way better than our old set. Came in a lovely box as well. Bit of an upgrade from the Tesco knives we had before lol

  5. Fiona (verified owner)

Had this for a few weeks now, edge is still really sharp and the damascus pattern looks proper nice. Its a bit heavier than my old gyuto so took a bit of getting used to but I actually quite like the balance now. Wish it came with a blade guard though, wouldve been handy. Solid knife for the price.

  6. Daisy G. (verified owner)

got this for me husband’s birthday and he proper loves it. the pattern on the blade is gorgeous, photos dont do it justice. he’s been using it for everything, says it glides through veg and the weight feels just right. came in a nice box too which was a bonus

  7. Isla R. (verified owner)

Its decent enough but not sure its worth the 75 quid tbh. The damascus looks pretty and it holds an edge alright but I was expecting it to be sharper straight out the box. Had to give it a few passes on the stone before it really bit into tomato skins. Its a bit heavier than what im used to as well, makes my wrist ache after a big prep session. Fine for everyday but nothing special

  8. Steph (verified owner)

Got this as a birthday present for the wife and she absolutely loves it. It’s really bloody sharp, sliced through a roast chicken like it were butter. The pattern on the blade is stunning, pictures don’t do it justice. We’ve been using it for about a month now and it’s still razor sharp. Definitely a step up from our old IKEA knives lol

  9. Owen (verified owner)

Nice knife overall, very sharp and looks the part on the magnetic rack. Only thing is it’s a tad heavier than my previous gyuto so took a few days to get used to the balance. Handle is comfy though. Makes prepping veg a doddle. Would still recommend, especially for the price.

  10. Rachel M. (verified owner)

Really nice blade, holds an edge brilliantly. Used it to prep a Sunday roast and it breezed through everything. Only thing is the handle feels a bit small in my hands, took a few goes to feel natural. Not a dealbreaker though, still a cracking knife for the price.

  11. Holly T. (verified owner)

Got this for my husband’s birthday and he’s absolutely chuffed with it. The Damascus pattern is beautiful, looks even better than the photos. He’s been using it daily for a fortnight and says it still glides through tomatoes like they’re nothing. Properly sharp out the box. Well happy with it.

  12. Nathan M. (verified owner)

its a good knife dont get me wrong, nice and sharp and the steel quality seems solid, vg10 core keeps its edge well. but for nearly 75 quid i was expecting something a bit more special? maybe im just used to my old sabatier which feels abit more robust, this gyuto is on the lighter side which might be a plus for some but i find it a bit dainty. the handle is fine just nothing fancy. does the job but i dunno, its not bad just not wow if that makes sense.

  13. Mel Jones (verified owner)

got this as a birthday present for my husband who fancies himself a bit of a chef lol he absolutely loves it, the damascus pattern is really striking and the blade is razor sharp out the box took a few days for him to stop showing off chopping everything in sight but its genuinely made meal prep so much quicker. we had a pretty decent global before but he says this one holds its edge loads better and feels nicer in the hand, the handle is comfy even for me with small hands. arrived in a nice box too, proper presentation.

  14. Jess Harris (verified owner)

So I got this for my husband for his birthday and he loves it. He said it makes quick work of chopping veg and the blade looks beautiful with those layers. Came in a lovely box too. Cant fault it for the price.

  15. Kev Dunn (verified owner)

Really impressive knife for under seventy quid. Used it to prep a whole Sunday roast and it handled everything from the chicken to the root veg without needing a sharpen. The Damascus finish is proper eye candy as well. Definitely recommend.

  16. Fiona Dixon (verified owner)

Its alright, does the job but I was expecting a bit more given the description. The damascus pattern is nice but the knife feels a little unbalanced in my hand. Not bad for the price but I’ve had better.

  17. Emily W. (verified owner)

Good quality for the money. The blade is sharp and holds its edge decently. I do wish it came in a slightly longer version for bigger jobs but thats just personal preference. Happy with it.

  18. Millie Perry (verified owner)

Brilliant knife, exactly what I needed. Lovely edge on it out the box. Massive upgrade from the random Amazon set I had before. The handle feels good in my hand.

  19. Olivia (verified owner)

Been using it every day since it arrived about a month ago. Cuts through everything like butter, no joke. The VG10 steel holds its edge really well compared to my old Global. The handle is comfortable too, nice weight to it. Only thing is I wish I’d bought this sooner.

  20. Mel Walker (verified owner)

Nice knife overall, cuts really well and looks the part. Only minor thing is the handle is a bit thicker than what I’m used to but I’ve gotten on fine with it after a few uses. Would still recommend it.

  21. Nic S. (verified owner)

Got this a couple weeks ago and it’s brilliant. The damascus pattern is stunning and it came sharper than any knife I’ve ever owned. Made mincing garlic an absolute doddle. Already ordered another for my mate.

  22. Mike (verified owner)

Its a decent knife. Looks nice and is sharp. I dont know, for the price I guess I was expecting to be a bit more wowed. It does the job but doesnt feel that much different from my old one that cost half as much.

  23. Ruby (verified owner)

Ok so I was a bit nervous spending this much on a knife but I’m so glad I did. The weight and the way it rocks through herbs is just spot on. Cant believe how sharp it is out the box, sliced a tomato paper thin with no effort at all. Massive upgrade.

  24. Bradley Hughes (verified owner)

So I got this to replace my old supermarket chef’s knife and wow, what a difference. The damascus pattern is stunning in person, photos dont do it justice. It just glides through veg, makes prepping dinner a joy. Been using it for a fortnight now and its still razor sharp.
