So I’d been mangling veg with a blunt old thing for years and finally got this gyuto. The 67 layers look beautiful and the VG10 core is no joke, still razor sharp after prepping loads of big meals. The wa handle took a bit of getting used to because it’s octagonal and I’m more a western grip person but tbh I think I’m converting. Balances really nice just forward of the heel, makes the rocking motion feel effortless. Came dead quick and well packaged, no complaints at all. For £75 you’d struggle to find better.

Alright so I’ve been using this daily for a fortnight now and it’s a brilliant all-rounder. The VG10 core takes a wicked edge and doesn’t need constant touching up, which is a godsend. Done everything from fine dice on shallots to carving a roast chicken, blade just glides. Was a bit worried the 7.5″ might feel short but honestly the balance is spot on and it’s got that nice flat gyuto profile for chopping. Massive step up from my old supermarket knife, that thing’s gone in the charity shop pile now. Only tiny thing, the handle took a couple meals to get used to but I actually like how light it is now. Wouldn’t swap it.

It’s a decent enough knife but I’m not blown away honestly. Came well packaged, the Damascus finish looks nice, but in use it feels a bit stiff. I expected more of that smooth rocking action you get with a gyuto, it just doesn’t flow the way I wanted it to. Sharp out the box and holds its edge fine so far, can’t fault the quality. Just feels a little… soulless? For £70 I dunno, might of expected a bit more feel. Probably will stick to my old Kai for most jobs.
